Turkey Meatloaf Recipe

Ingredients

  • 2 pounds ground turkey

  • 1 cup diced white onion

  • 1 tablespoon seasoning salt

  • 1/2 teaspoon dried thyme

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon fresh cracked pepper

  • 1/2 cup bread crumbs

  • 1 large egg

  • 2 tablespoons ketchup




For the Topping

  • 2 tablespoons ketchup

  • 2 tablespoons barbecue sauce

Method

1. Start by getting your veggies ready. Dice one cup of white onion and one cup of bell pepper, then finely chop a handful of flat-leaf parsley.

2. In a large bowl, combine the ground turkey with the diced veggies, parsley, and seasonings. Add the seasoning salt, thyme, paprika, onion powder, garlic powder, and cracked pepper. Toss in the bread crumbs, the egg, and the ketchup. Gently mix everything together with a spatula or your hands—just don’t overmix, or the meatloaf can get tough.

3. Lightly grease a loaf pan, then add the turkey mixture, pressing it down gently to make an even shape. In a small bowl, stir together the ketchup and barbecue sauce, and spread it evenly over the top of the meatloaf. Place the loaf pan in a preheated oven at 350°F and bake for about an hour.

4. Once the meatloaf is done, let it rest for a few minutes before slicing. Serve it up with your favorite sides—roasted vegetables, mashed potatoes, or even mac and cheese work beautifully.
