Once your tortillas are ready, place a slice of feta cheese in the center of each one. Be mindful of the thickness—too thick, and the pockets might be overly salty; too thin, and the feta could break when you fold the tortilla.
Next, add a few pieces of sundried tomatoes on top of the feta. Drizzle a teaspoon of the oil from the sundried tomatoes over the filling. Sprinkle some chopped basil leaves for a fresh, herby flavor.
