Once the glaze sets and the internal temperature reaches 165°F in the breast, it’s time to pull the turkey from the smoker.
Let the turkey rest for a few minutes before carving to allow the juices to redistribute. The true test of a smoked turkey’s success is in the breast meat. If it’s still moist and flavorful, you’ve nailed it.
