Types of Kitchen Knives

There are many different types of kitchen knives, with some being used for multiple purposes and others used for something more specific. When looking for a set, consider which type of knives you will use and not use. For instance, if you are vegetarian or vegan, you can avoid sets with knives for meat and fish. Also, consider what knives you may use in the future as your culinary skills grow. Some different types of kitchen knives include:

Bread

Bread knives are serrated and excellent for cutting into the crust of bread with minimal tearing. They’re also longer than others to create a long sawing action, reducing further tearing of the bread.

Utility

A utility knife is long and thin. It can be used for various tasks (hence its name) and can slice tomatoes or thinly slice meat.

Paring

A paring knife looks similar to a utility knife, only shorter. They are often used to peel fruit and vegetables as well as carve vegetables into interesting shapes for bento boxes.

Chef

A chef’s knife is between 8 and 10 inches long and can be used to chop vegetables, fruit, herbs, fish, and poultry.

Cheese knife

You can use a regular knife to cut and spread cheese, but I recommend using a cheese knife because it is made with that purpose in mind. In addition, cheese knives are designed to prevent the cheese from sticking to the blade. When I use a cheese knife, for example, I get consistent slices as opposed to the broken, crumbly, and misshapen slices that other knives produce. There are many cheese knives to choose from, but you will find the most common ones will feature holes in the blade and a cheese fork at the end.

Boning knife

This knife is long and has an extended blade near the handle with a large curve that makes the rest of the blade predominantly narrow. The narrow blade leaves plenty of space to maneuver around the bone so you can easily cut off most of the meat without wasting any.

Cleaver or butcher’s knife

A cleaver (or butcher’s knife) is a heavy knife with a tall blade. This leaves a lot of space between your knuckles and the table, meaning you can apply the necessary force to cut through bones and tough meat.

Carving knife

A carving knife is used to carve cleaner slices. For example, this knife is often used to carve the Thanksgiving turkey or Christmas chicken.

Salmon and filleting knives

The filleting knife is a thinner version of a boning knife and is often sharper. These knives are used to slice and dice fish, and are long with rounded ends to prevent damage to the fish. Additionally, the thin blade allows you to cut extremely thin slices.

Santoku knife

Also known as “three uses” knives, santoku knives can efficiently slice, mince, and dice vegetables. This knife is usually made from a sheep’s foot blade where a false point is created.

Nakiri knife

A nakiri knife is long and flat and ideal for any vegetable prep.

Tomato knife

A tomato knife is a small, slightly-serrated blade. The serration allows you to cut through the skin of tomatoes and other fruits easily. This type of knife usually has a fork at the end that can pick up the tomato once you have sliced it.

Look for Knives Made From Durable Materials

Once you know what type of knives you are looking for, you should consider what material they are made from. The strongest steel is German steel, but the sharpest steel is Japanese. Knives labeled as stainless steel are usually rust-resistant but not as durable as German steel or as sharp as Japanese steel. Many stainless steel alloys combine other metals to strengthen the stainless steel while maintaining its rust resistance.

Don’t Neglect the Handle

The handle you choose should be made from a durable material that is also comfortable to grip. Plastic handles are softer to grip than steel but are not as durable. Wooden handles, on the other hand, are a great adoption but take a little extra care as water left in the wood can swell and crack. Further, the handle should be curved in a way that prevents you from easily dropping the knife and the shape should be comfortable to use over long periods.  While the most durable knives are made from a single piece of metal, this is not always the most comfortable option. A full tang blade with a wooden or plastic handle (held on by three rivets) offers a good mix of comfort and durability. The handle is then placed upon this metal, creating a more durable knife.
